Ingredients
1 tablespoon unsalted butter
3 tablespoons chopped shallots
6 ounces fresh morels, cleaned
1 teaspoon kosher salt
¼ cup heavy cream
2 tablespoons Cognac
2 tablespoons freshly grated Parmesan cheese
Preparation
- Step 1
Preheat the broiler. Melt the butter in a medium-size cast-iron skillet over medium-low heat. Add the shallots and cook until soft, about 3 minutes. Add the morels and salt and cook, stirring occasionally, for 10 minutes. Stir in the cream and Cognac and simmer for 5 minutes longer. Sprinkle with the Parmesan cheese and place under the broiler until browned. Divide among 4 plates and serve immediately.

Recommend using half the salt. I used 3/4 tsp with 8 oz. morels, and was on the verge of being too salty. Overall, delicious though. Low-maintenance, high impact!
