Yield:pastry for pie crust and lid
  • 3 cups flour

  • ½ teaspoon salt

  • 9 tablespoons butter, cut in bits

  • ¼ cup solid vegetable shortening

  • 1 egg plus 1 yolk, lightly beaten

  • 3 to 4 tablespoons ice water

Preparation

  1. Step 1

    In large bowl combine flour and salt. Cut in butter and shortening until mixture resembles coarse meal.

  2. Step 2

    With fork stir in egg and enough water to moisten dry ingredients.

  3. Step 3

    Divide dough in half, place each half on sheet of waxed paper and press into a flattened disk. Chill at least one hour before rolling.
