Ingredients
Yield:about 4 cups
2 cans (about 4 cups) chicken broth
2 tablespoons soy sauce
2 scallions, trimmed and cut into 1-inch lengths
2 thin slices fresh ginger, unpeeled, or ½ teaspoon ground ginger
Salt and freshly ground black pepper to taste
Preparation
- Step 1
Combine all ingredients except salt and ground pepper in a medium saucepan, and bring just about to a boil. Turn the heat a little lower, and simmer, uncovered, 10 to 20 minutes. Strain, taste and adjust seasonings.
Tip
Use in highly seasoned soups, like those flavored with curry or chilies.
