Ingredients

Yield:3 cups
  • 1 cup sugar

  • 2 ripe, ½-pound mangoes, peeled, pitted and diced

  • Juice of 1 lime

Preparation

  1. Step 1

    Combine sugar and ¾ cup water in small saucepan, and simmer until sugar dissolves. Remove from heat, and cool to room temperature.

  2. Step 2

    Combine cooled syrup, mango and lime juice in blender or food processor, and blend until smooth. Cover, and refrigerate until very cold.

  3. Step 3

    Stir mixture, and then freeze in ice cream maker according to manufacturer's directions. Serve at once, softly frozen, or transfer to container and freeze at least 2 hours longer to harden.
