This recipe is a keeper. Gently spiced with cinnamon, tinged with brown sugar and loaded with apple butter, it’s as deeply flavored as an apple pie can be, all covered with a buttery wide-lattice top crust. Although it’s at its most ethereal when baked on the same day you serve it, it’s still wonderful made a day ahead.     For the Crust

    • cups/300 grams all-purpose flour
    • ½teaspoon/2.5 grams kosher salt
    • sticks/20 tablespoons/285 grams unsalted butter, chilled and cubed
    • 4tablespoons/60 milliliters vodka (optional)
    • ¼ to ½cup ice water

    For the Filling

    • 3pounds/1⅓ kilograms apples, peeled, cored and thinly sliced crosswise (⅛-inch)
    • ½cup/99 grams granulated sugar, more as needed
    • 2tablespoons/30 grams dark brown sugar
    • 2tablespoons/30 grams quick-cooking tapioca
    • teaspoons/3 grams ground cinnamon
    • 1teaspoon/3 grams ground ginger
    • ¼teaspoon grated nutmeg
    • Pinch ground cloves
    • tablespoons/22 milliliters lemon juice
    • 3tablespoons/45 grams apple butter
    • Heavy cream or milk, as needed
    • Whipped cream, sour cream or crème fraîche, for serving

Preparation

  1. Step 1

    Make the crust: In a food processor, pulse together flour and ½ teaspoon salt. Add butter and pulse until mixture forms ¾-inch pieces. Mix vodka with 4 tablespoons ice water (or use ½ cup ice water). Add half the ice water mixture to dough, pulse a few times, then continue adding liquid a tablespoon at a time until dough just comes together (you might not use all the liquid). Dough should be moist, but not wet, and hold together when pinched. If there are visible pieces of butter in the dough, all the better.

  2. Step 2

    On a lightly floured surface, gather dough into a ball. Remove a third of the dough and form into a disk. Form remaining dough into a disk. Cover both tightly with plastic wrap and refrigerate for at least 1 hour and up to 5 days.

  3. Step 3

    On a lightly floured surface, roll out larger disk to a 12-inch circle. Transfer dough to a 9-inch pie plate. Fold over any excess dough, then crimp edges. Prick crust all over with a fork, then chill crust for 30 minutes or up to 24 hours.

  4. Step 4

    While dough chills, heat oven to 400 degrees. Line chilled crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes; remove foil and weights and bake until pale golden, 5 minutes more. Cool on rack until needed. (You can bake the crust up to 24 hours in advance.)

  5. Step 5

    Toss apples with sugars, tapioca, spices, ½ teaspoon salt and the lemon juice. Fold in apple butter. Transfer apples to crust and press gently to make sure fruit is tightly packed.

  6. Step 6

    Roll out remaining dough disk to a 10-inch round. Use a knife to cut strips 1¾ inches wide. Arrange strips over the filling in a lattice pattern. Brush top of crust with heavy cream or milk. Sprinkle with granulated sugar.

  7. Step 7

    Place pie on a rimmed baking sheet lined with foil. Bake 15 minutes; reduce heat to 350 degrees and continue baking until crust is golden brown and juices are bubbling thickly, about 1 hour 15 minutes more. Let pie cool on a wire rack for at least 2 hours before cutting. Serve with whipped cream, sour cream or crème fraîche.

OK, I found out about the vodka and discovered something wonderful. The alcohol prevents gluten formation from the flour, keeping the crust flaky. So...

I used Laird Applejack I keep in the freezer (also 80 proof) instead of the vodka. Apple brandy IN THE CRUST. It's an unbelievable pie. Let's call it Triple Apple Pie.

Would someone please tell me why every recipe they publish now that uses a "FOOD PROCESSOR" doesn't have an alternate procedure for those of us who are our OWN food processors?

I always bake pies on the lowest rack in the oven. Temperature in the oven is always highest at the top. A pie too high in the oven will likely end up with dark top crust. Of course, you can always cover loosely with foil during baking to slow further browning.

Made the crust w/o a food processor. Just take a minute longer, but less clean-up. This was a great, reliable recipe, with a pre-bake much longer on the bottom crust than I would normally do. The result was a crispy bottom, perfectly balanced apple pie. I did up the seasoning slightly. In another version, I subbed the white sugar for allulose/monkfruit and used vegan butter. Browned a little more, but was still perfect.

Very tasty pie! Like many others, we used bourbon instead of vodka and I thought it went so well with the flavors! Some younger eaters did not enjoy this flavor. The milk wash on the top leaves a dull dry look. Next time I will opt for an egg wash.

This is a holiday stunner! I used 3 granny smith and 3 fuji apples. The apple butter and lemon give the filling a great flavor. I made the crust using ice water, no vodka. Really glad I didn't get intimidated by making my own crust, the directions were quite clear and it turned out beautifully!
