  • ¼ cup fresh coconut juice or water

  • 1 teaspoon rice-wine vinegar

  • 1 teaspoon sugar

  • 1 red Thai chili, seeded and finely chopped

  • 2 cloves garlic, peeled and minced

  • 1 tablespoon lime juice

  • 1 tablespoon fish sauce

  • 2 star fruits, thinly sliced

  • 1 unripe banana, peeled and thinly sliced

  • 1 cucumber, peeled, seeded and thinly sliced

  • ½ cup chopped mint leaves
