  • 2 tablespoons vegetable oil

  • 1 small onion, chopped

  • 2 cups long-grain rice

  • ¼ cup tomato paste

  • ½ cup finely chopped smoked beef sausage

  • 4 cups water

Preparation

  1. Step 1

    Heat oil in pot; add onion and saute a few minutes until onion is soft.

  2. Step 2

    Add rice and cook, stirring, a minute or two with onion, tomato paste and sausage.

  3. Step 3

    Stir in water; partly cover and bring to boil. When water boils, stir once; cover tightly and reduce heat to simmer. Cook until water has evaporated, about 17 minutes.

Just needs a pinch of salt and a good substitute is spicy chicken sausage. We enjoyed it very much.
