  • 4 medium potatoes, pared and cut in ½-inch cubes

  • 1 cup chopped onion

  • ½ cup coarsely chopped green pepper

  • Salt and freshly ground black pepper to taste

  • ¼ teaspoon caraway seed

  • ¼ cup butter

Preparation

  1. Step 1

    Place potatoes in center of 18-by-22-inch rectangle of heavyduty aluminum foil.

  2. Step 2

    Add onion and green pepper. Season with salt, pepper and caraway. Dot with butter. Seal securely.

  3. Step 3

    Place foil package, seam side down on baking sheet and bake at 425 degrees for about 40 minutes. Turn package once after 20 minutes.
