Ingredients

Yield:About three-quarters of a cup
  • ½ cup mayonnaise

  • 1 hard-cooked egg

  • 1 tablespoon finely chopped shallots

  • 2 tablespoons finely chopped parsley

  • 2 tablespoons finely chopped chives

  • 2 tablespoons capers, drained and pressed to extract excess liquid

  • 1 teaspoon lemon juice

  • ¼ teaspoon Tabasco sauce

    Put the mayonnaise in a mixing bowl.

    Put the egg through a fine sieve and add it. Add the shallots, parsley, chives and capers. Add the lemon juice and Tabasco sauce and blend.
