  • ½ cup minced celery (white section plus tender leaves)

  • ½ cup minced onion

  • 1 teaspoon minced hot green pepper like jalapeno

  • ¼ cup minced fresh coriander

  • Juice of 2 lemons

  • Salt and freshly ground black pepper to taste
