Ingredients
Yield:2 servings
- 10ounces spinach
- 1large clove garlic
- 2oranges
- ⅛teaspoon salt
- Freshly ground black pepper
Preparation
- Step 1
Wash spinach, and trim.
- Step 2
Mince garlic.
- Step 3
Heat nonstick pot. Saute garlic about 30 seconds, add spinach and cover. Cook until spinach wilts, about 1 or 2 minutes.
- Step 4
Peel oranges, and cut each segment in half. Stir into spinach, season with salt and pepper, and serve.

Made this in 5 minutes and it was a tasty, easy side that I’ll make again. I give the recipe 5 stars not because it’s a total knockout in and of itself, but because it’s a simple style of serving greens and citrus in a different way—and you can take it so many places from here.
