  • Zest of 1 lemon, grated

  • Zest of 1 lime, grated

  • Zest of 1 orange, grated

  • 1 tablespoon freshly squeezed orange juice

  • 2 teaspoons fresh tarragon, chopped

  • 1 scallion, minced

  • Salt

  • freshly ground pepper
