Roasted Sweet Potatoes

Ingredients
2 pounds sweet potatoes, peeled and cut into 1-inch pieces (3 medium potatoes)
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt (such as Diamond Crystal)
Black pepper
2 teaspoons chopped fresh thyme, rosemary or sage, or 1 teaspoon dried (optional)
Preparation
- Step 1
Heat the oven to 425 degrees.
- Step 2
Place the sweet potatoes on a sheet pan. Drizzle with the olive oil, salt, a few grinds (or shakes) of black pepper and the thyme, if using, and toss well.
- Step 3
Roast the potatoes for 30 to 35 minutes, tossing halfway, until fork tender and caramelized. Serve warm or at room temperature.

Please become more aware of how much plastic is used once and then thrown away. Use a bowl and wash it. It may take more time but the environment will be a tiny bit better off!
I have put all ingredients in large plastic bag and shaken it to coat oil evenly before baking. Time saver.
Second year making this for Thanksgiving. It is so easy, it shouldn’t be legal to make for Thanksgiving. I don’t get the debate on plastic bagging vs using a bowl. Just put them on the roasting pan, season, drizzle with oil, and just toss it together in the pan. You’re gonna have to clean the roasting pan anyway, so why dirty a mixing bowl or a plastic bag, regardless of whether you will reuse it or discard it? Less mess, less cleaning, best for the environment. Get your hands dirty. It’s good for the soul.
Very nice. Start keeping an eye at 30 minutes roasting. Served with grilled octopus and sweet pepper medley.
I mix the sweet potatoes, thyme, and oil in the bowl. I was going to serve it in. Thus eliminating a bag and a second bowl.
So.... plastic is used in this recipe? I didn't see that - looks like they use a spatula in the video. & this is one of the simplest and easiest recipes with sweet potatoes, and very satisfying, too! EmileG
