I usually add a heaping spoon of sour cream to any banana bread recipe. Seems to work for me and may keep your bread from being dry...no real evidence though.
Did anyone try adding vanilla?
I used 1/2 cup whole wheat pastry flour with 1 1/2 cup all purpose. Swapped coconut sugar for regular and walnuts for peanuts. Eliminated chocolate chips. Came out moist and full of flavor.
This recipe is almost exactly like one I got from my mother in 1965, the differences being a whole cup of sugar and no chocolate chips. The butter is melted in my recipe. I just made it and was reminded how simply delicious it is. Definitely, 3 good-sized very ripe bananas are I think what make it moist.
Unfortunately, I have to agree with others who have said it was a bit dry. Good flavor overall, but definitely dry.
