Original Plum Torte

Ingredients
¾ to 1 cup sugar
½ cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt (optional)
2 eggs
24 halves pitted purple plums
Sugar, lemon juice and cinnamon, for topping
Preparation
- Step 1
Heat oven to 350 degrees.
- Step 2
Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
- Step 3
Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
- Step 4
Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)
To freeze, double-wrap the torte in foil, place in a plastic bag and seal.

Hi - I'd like clarification on the flour --- 1 C flour, sifted - is that one cup of flour and sift and add, or sift the flour to equal one cup of flour - makes a difference. Thank you.
In 1988 my Toronto newspaper was about to post me to Beijing as a foreign correspondent. Alas, my house wasn't selling. I'd read that the fragrance of baking helps so I bought a frozen loaf of bread, and warmed it in the oven. No sale. Desperate, I baked this torte for an open house. Ta-dah! With the kitchen infused with the sweet perfume of Original Plum Torte, the house sold.
Sifted flour means sift then measure.
Flour, sifted means measure them sift.
Hello everyone, i was very excited to make this cake as my brother has just harvested from his plum tree and gifted me an enormous amount of plums i had no idea what to do with them all. My spring form pan leaked and caused my oven to flood with smoke and it was very alarming. I would recommend doing a layer of something in the pan or a sheet pan below it to catch anything that might drip. RIP to my plum cake 😭
A delightful and tasty baked creation, but it's a cake, not a torte. "A torte is a rich, usually multilayered, cake that is filled with whipped cream, buttercreams, mousses, jams, or fruit" (ref. Wikipedia). If you've ever had a slice of a Torte in, say, Vienna or Berlin, you'll know the difference.
Since I made this, on the recommendation of my oldest friend, I’ve continued to make one after another, as soon as eaten up! I’ve used plums, then mixed blueberries and strawberries, now plums and peaches— while fruit season lasts! Wow!
