Ingredients
6 to 8 catfish fillets, about 2 pounds
½ cup freshly grated Parmesan cheese
¼ cup flour
Salt to taste, if desired
Freshly ground pepper to taste
1 teaspoon paprika
1 egg, lightly beaten
1 tablespoon milk
¼ cup melted butter
¼ cup sliced almonds
Preparation
- Step 1
Preheat the oven to 350 degrees.

Wipe the catfish dry.
- Step 3
Blend together the cheese, flour, salt, pepper and paprika.
- Step 4
Combine the egg and milk in a flat dish.
- Step 5
Dip the fillets in the egg mixture and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish and pour the butter over all. Sprinkle with the almonds. Place in the oven and bake 20 minutes.

Sprinkle fish with salt and pepper before breading. Broil the baked filets a few minutes before serving to achieve a better crust.
Absolutely love this recipe. I skip butter and drizzle fish fillets with avocado oil instead. Makes for perfect and easy fish sandwiches: toasted sourdough, mayo, avocado, tomato and fish. Fast and tasty dinner!
Best not-fried catfish I have ever eaten. Everyone thought so!
Very good. I substituted olive oil for butter. Didn’t use almonds. A few minutes under the broiler helped a lot. Next time I’ll put plain bread crumbs in the dry mixture. We couldn’t really taste the cheese, but it probably made an overall difference in the flavor. Maybe next time I’ll add more cheese.
Tasty and easy way to prepare my favorite fish -- catfish. I cut the butter in half and it was plenty. Will try walnut oil instead based on another reviewer's suggestion (or maybe 1/2 & 1/2). Also concur with another reviewer that salting the fish beforehand is a good idea.
