  • 1 11-to-12-pound turkey

  • Salt to taste, if desired

  • Freshly ground pepper to taste

  • 2 onions, peeled and cut into quarters

  • 2 ribs celery, cut crosswise into thirds

  • 6 sprigs fresh parsley

  • 1 tablespoon butter at room temperature

  • 1 tablespoon paprika

Preparation

  1. Step 1

    Preheat the oven to 325 degrees.

  2. Step 2

    Sprinkle the cavity of the turkey with salt and pepper to taste. Put the onions, celery and parsley into the cavity. Truss the turkey if desired.

  3. Step 3

    Rub the outside of the turkey all over with butter and sprinkle the outside with paprika.

  4. Step 4

    Place a rack in a roasting pan and place the turkey breast-side up on the rack. Place in the oven and bake about 15 minutes to the pound, from 2 ½ hours to 2 hours 45 minutes. Remove the turkey and let stand 15 minutes. Discard the solids from the cavity and carve the turkey.
