  • 6 cups rolled oats

  • 1 ½ cups bran

  • 1 ½ cups wheat germ

  • ¾ cup chopped almonds

  • 1 tablespoon cinnamon

  • 1 tablespoon cardamom

  • Zest of one orange, minced

  • Zest of one lemon, minced

  • ⅓ cup honey

  • ¼ cup vegetable oil

  • ½ cup apple juice

Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    In a large bowl, combine the oats, bran, wheat germ, almonds, cinnamon and cardamom.

  3. Step 3

    In a saucepan over medium-low heat, combine the orange zest, lemon zest, honey, vegetable oil and apple juice. Simmer for 5 minutes. Remove from heat and pour over the dry ingredients, stirring well to combine. Spread the mixture in ½-inch layers on cookie sheets and bake about 40 minutes, or until toasted, stirring every 10 minutes. Remove from the oven, allow to cool and store in a tightly sealed container for up to a month.

This granola wowed my whole family! The zest of the lemon and the cardamom were the highlights. I added dried cranberries. I'll probably do it with more honey next time though maybe double the amount.

At first, I wasn’t so sure about the results of this granola. But, I’ve grown to enjoy it quite a bit. I recommend that you saturate it with a plant-based milk and add frozen or fresh berries. With a touch of agave on top. And then, it’s quite delicious and satisfying.
