@JaneBIVL I have the best method for ripening melons, let them live in your car for a few warm summer days!! it’s perfect:)
@JaneBIVL, to find a ripe honeydew, run your open palm across a row of honeydews. If your hand "sticks" to one, it's ripe. Unripe ones are smooth with no "dew" seeping through the skin. Sometimes you'll find that all the honeydews are unripe. Pass on them that day.
This was amazing. I used 3 whole scallions instead of white onion as that's what I had, and I also added a handful of chopped mint, and used less olive oil but just eyeballed that. So refreshing I ate the whole bowl throughout the afternoon!
Delicious! Made with cantalope instead of honeydew, which is what I had. Will definetly make again.
The amount of salt called for in this recipe is extreme. We nearly threw the salad out, but I liked the mix of ingredients so I tried it again with salt, olive oil and lemon juice to taste. Much better@
Honey Dew, Funny Dew. Look for someone who caries 'Galia' melons, or any other of the newer green melons, they have fabulous deep sweet flavor! (The salad didn't last through our meal.)
