  • 1 ¼ cup flour, more for dredging

  • 1 teaspoon baking powder

  • ½ teaspoon kosher salt

  • 1 cup seltzer

  • Vegetable oil, for frying

Preparation

  1. Step 1

    Freeze the candy bars for 30 minutes.

  2. Step 2

    Whisk together flour, baking powder and salt in a large bowl. Whisk in seltzer. Heat 4 inches of oil to 375 degrees in a deep fryer or saucepan.

  3. Step 3

    Dredge candy bars in flour, then coat evenly with batter. Working in batches, fry until golden and puffed all over, turning if needed, about 2 to 3 minutes. Drain on paper towels.

  • Variations: Use for fish fillets, peeled and sliced sweet potatoes or asparagus.
