Ingredients
Yield:4 to 6 servings
- 1dozen mini candy bars
- 1¼cup flour, more for dredging
- 1teaspoon baking powder
- ½teaspoon kosher salt
- 1cup seltzer
- Vegetable oil, for frying
Preparation
- Step 1
Freeze the candy bars for 30 minutes.
- Step 2
Whisk together flour, baking powder and salt in a large bowl. Whisk in seltzer. Heat 4 inches of oil to 375 degrees in a deep fryer or saucepan.
- Step 3
Dredge candy bars in flour, then coat evenly with batter. Working in batches, fry until golden and puffed all over, turning if needed, about 2 to 3 minutes. Drain on paper towels.
Tip
- Variations: Use for fish fillets, peeled and sliced sweet potatoes or asparagus.
