This is as easy at it sounds — almost effortless, really. Just be sure to use a vermouth you really love (I’m a fan of dark, robust, earthy Spanish ones) and keep the bottle in the fridge.

  • 2 ounces sweet vermouth

  • 4 ounces soda water

  • Wedge of citrus or olives, for garnish (optional)

    Fill a highball or large wine glass with ice. Add the vermouth and top up with the soda water. Garnish, if desired, with a fat wedge of lemon or orange or grapefruit, and/or a nice olive or two. Want something stronger? Add a slug of gin.

Can you tell me what you buy? I wouldn't know a "Nice" vermouth if I tripped over it. Thanks.

If you're not mixing the vermouth with anything else other than soda water, could you do much better than Carpano Antica Formula?

Try adding liquor to your favorite kombucha. Whiskey + blood orange; gin or vodka + lemon ginger; rum + pineapple. Very easy, low sugar, carbonation, and healthy bacteria!

If you can find it Berto Sweet vermouth is Great and priced right!

A variation with dry vermouth, add a bit of honey syrup: equal parts honey and water with a small pinch of salt, you can mix it up in a bottle of nearly-finished honey and keep it in the fridge.

I added a tablespoon or so of olive brine to excellent effect
