Ingredients
Yield:2 cooked chicken breasts
2 whole, skinless, boneless chicken breasts, about TK pounds
Water to cover
1 small rib of celery, chopped
1 small onion, quartered
1 bay leaf
1 small sprig thyme or ½ teaspoon dried
Salt to taste, if desired
12 peppercorns
Preparation
- Step 1
Combine all the ingredients in a saucepan. Partly cover and bring to the boil. Let simmer 15 minutes. Let stand until ready to use.

I usually bring the water to the boil and then add chicken to ensure tenderness, simmer 10 mins and stand for at least an hour. AlMois moist.
