Ingredients
1 ¼ cups milk
1 2-inch piece vanilla bean
4 large eggs
¼ cup granulated sugar
Preparation
- Step 1
Combine milk and vanilla bean in glass measure. Cook, uncovered, at 100 percent power (see chart). Remove vanilla bean.
- Step 2
Whisk together eggs and sugar. Whisking constantly but not vigorously, pour hot milk into eggs. Divide among 4 or 2 custard cups and skim any foam from tops. Cook, uncovered for time given in chart, or until set.
- Step 3
Remove from oven and let stand until cool. Serve at room temperature or chilled.

600-700 watts: 2 minutes
400-500 watts: 4 minutes
Serving size: To cook custard (Step 2) in 4-cup measure
600-700 watts: 6 minutes at 50 percent power
400-500 watts: 6 minutes at 100 percent power
