Ingredients
Yield:One cup
1 cup tomato juice (see recipe)
2 teaspoons chopped fresh tarragon
2 teaspoons finely chopped shallots
½ teaspoon olive oil
½ teaspoon salt
Freshly ground pepper to taste

In a medium-size bowl, combine the tomato juice, tarragon and shallots. Whisk in the olive oil, salt and pepper.
