  • 4 cups shredded cooked turkey breast

  • ½ cup red, green or yellow sweet peppers, diced

  • ½ cup drained chopped canned tomatoes

  • ¼ to ½ cup hot sauce

  • ¼ cup honey

  • 1 tablespoon crushed red-pepper relish

  • ½ cup fresh chopped cilantro

  • 8 8-inch whole-wheat tortillas

Preparation

  1. Step 1

    Place the turkey in a cast-iron skillet over medium-low heat.

  2. Step 2

    Add the fresh peppers, and saute, stirring constantly for 10 minutes.

  3. Step 3

    Add the tomatoes, hot sauce, honey, relish and cilantro, and cook an additional 10 to 20 minutes. Serve wrapped in tortillas.
