Yield:4 dozen cookies
  • 2 ½ cups ground blanched almonds

  • 1 cup sugar

  • 2 tablespoons rose water plus additional rose water for shaping

Preparation

  1. Step 1

    Combine the almonds, sugar and 2 tablespoons rose water in a bowl.

  2. Step 2

    Pinch enough of mixture to roll into ball slightly smaller than a walnut.

  3. Step 3

    Using additional rose water shape balls into stars, pinching the points with fingers moistened with rose water.

  4. Step 4

    Place one inch apart on greased cookie sheets. Let stand at room temperature for three hours.

  5. Step 5

    Bake at 375 degrees for 10 minutes, until cookies are set and faintly golden.

Very easy and tasty. I found the amount of liquid inadequate and had to approximately double it. Next time I probably will use plain water for the extra liquid, since the rose flavor is very pronounced.

Addendum to my last note: since I have not yet baked these I could only give them stars enough to be good. I will definitely come back with my personal review after I bake them.

I cannot wait to try these. No eggs - that's unusual. They seem to me to be like a cookie my mama made that she called Italian kisses which I have no recipe for since she never wrote them down and when asked she would say 'watch me'! IMPOSSIBLE, because it was never quite the same each time she made anything, we kids had to guess to make even a facsimile of what she produced. Wish me luck folks!
