  • 1 teaspoon olive oil

  • 2 teaspoons balsamic vinegar

  • Freshly ground pepper to taste

  • ⅛ teaspoon salt (optional)

Preparation

  1. Step 1

    Wash and trim beans. Arrange in steamer over a little water, and steam until the beans are tender but still crisp, 5 to 7 minutes.

  2. Step 2

    Whisk oil and vinegar together in a serving bowl. When beans are cooked, drain thoroughly, and stir well with dressing to coat. Season with pepper and salt.

This is an absolute winner. One addition I make is to add homemade grainy mustard to the vinaigrette. My best mustard recipe: http://blog.katescarlata.com/2012/03/12/simple-homemade-grainy-mustard/.

A good, simple, useful recipe. I doubled it but that was too much vinaigrette for half a pound of green beans. Boiled rather than steamed to beans.

This recipe has been around for a while, but I just discovered it. It is a fantastic summer side dish. I thought it actually improved in the refrigerator, and would make it ahead next time for effortless dining.

Add potatoes along with the mustard.
