Ingredients
- ½cup brown rice
- 1cup water
- Salt and pepper to taste
Preparation
- Step 1
To cook brown rice quickly, soak it in the water for 2 hours or longer in advance. It can be put to soak the night before or in the morning.
- Step 2
Bring the rice and the soaking water, with salt and pepper to taste, to a boil; reduce heat; cover and simmer for 20 minutes, or until water has evaporated and rice is fluffy.
- Step 3
If rice is not presoaked, it will take 40 to 45 minutes to cook.

The rice was mushy as always. I followed the recipe to the letter. I don't eat brown rice just for this reason. I did some googling and the suggestion was to cook it like pasta for 30 minutes in lots of water. I've never tried that in all my years so that's how I'll do it next time.
It came out horribly. Wet. Mushy. Back to the Instant Pot I go for brown rice.
This worked well for brown basmati rice, which is long grain. Does anyone know if it works as well for short grain brown rice?
