Ingredients
3 cups canned imported tomatoes with basil
¼ cup olive oil
⅓ cup finely chopped onion
1 tablespoon finely chopped garlic
1 one-inch length of stick cinnamon or ½ teaspoon ground
Salt, if desired
Freshly ground pepper
1 bay leaf
½ teaspoon sugar
Preparation
- Step 1
Put the tomatoes and their liquid into the container of a food processor or electric blender. Process finely.
- Step 2
Heat th e oil in a saucepan and add the onion and garlic. Cook, stirring, unt il wilted. Add the cinnamon, salt and pepper to taste, bay leaf and sugar. Bring to the boil and let simmer about 30 minutes. Remo ve and discard the bay leaf and cinnamon stick, if used.

This is a delicious sauce. I serve it with small meatballs (ground beef and lamb flavored with coriander, oregano, onion, basil, and honey) as buffet or appetizer food. Together, the sauce and meat are flavorsome and a bit unusual - cinnamon and honey in a meat dish - but everyone loves it.
