Herby Cottage Cheese Egg Bake

Ingredients
10 large eggs
1 pint/450 grams large-curd cottage cheese
1 ½ cups/60 grams finely chopped soft herbs, such as dill, parsley and cilantro (a combination of least two types of herbs works best), loosely packed, plus more for garnish
6 scallions, finely chopped
1 teaspoon kosher salt (such as Diamond Crystal)
½ teaspoon black pepper
1 cup/135 grams pre-shredded low-moisture mozzarella
½ cup/70 grams crumbled feta (optional)
Preparation
- Step 1
In a large bowl, whisk the eggs until homogenous. Add the cottage cheese, 1½ cups chopped herbs, scallions, salt and pepper and stir gently to combine. If desired, cover and refrigerate overnight.
- Step 2
Heat oven to 375 degrees and butter a 9-by-13-inch baking dish.
- Step 3
Stir the egg mixture briefly and pour into the prepared pan. Sprinkle the mozzarella cheese over the top and bake until just set in the middle, 25 to 30 minutes. If desired, briefly broil the egg bake to brown the cheese topping. If desired, finish with a sprinkle of feta and more herbs. Cut into squares and serve warm, at room temperature or cold.

1 pint / 450 g of cottage cheese would be 2 cups, not 1-1/2 cups as written in recipe. Which is it?
Really easy to halve. I used 5 eggs, chopped 1 bunch dill, 1 bunch cilantro, 3 scallions, 1/2 teaspoon kosher salt and 10 twists of the pepper mill. Poured it into a buttered 8 x 8 Pyrex and threw on half a cup of shredded mozzarella . Baked for 25 minutes and tossed on crumbled feta after removing it.
This was super easy to make and a real hit with my family. I used basil and parsley as the herbs, plus 16 oz of cottage cheese. The baking time was off, I suspect due to using 16 vs 12 oz of cottage cheese. To get the dish to set, I baked it for 40 minutes plus 2 minutes under the broiler.
Easy and delicious. Essentially meal preps for the family. Leaves flexibility for lots of editing to suit your taste. I added smoked paprika and garlic powder. Only important note is that depending on the size of your pan and the water content of the veggies, the cook time can vary dramatically. Kept mine in the oven for 45-50 minutes in a pan slightly smaller than 9x13, and it needed the entire time to set.
I think my husband enjoyed this more than any egg casserole I've ever made. I measured the cottage cheese by weight (and then had to substitute Greek yogurt for 3/4 of the cottage cheese when I realized we were out). For herbs I used 1.5-2 cups of fresh basil. Used cheddar instead of feta & mozzarella. I combined everything using my Vitamix blender so that I didn't have to chop the basil (my kids are 1 and 4 - dinner prep hour is about survival). The basil flavor ended up infusing throughout the whole dish. It was awesome. Excellent when paired with Old Bay hot sauce. Will definitely make again.
How this ever got into a "best" list is beyond me! Bland and flavorless! Don't bother wasting the ingredients!
