Tomato Lentil Rice With Feta Yogurt

Ingredients
For the Rice
2 tablespoons olive oil
1 medium white onion, diced
6 large garlic cloves, minced
¾ cup brown lentils, rinsed
1½ cups jasmine rice, rinsed
½ cup jarred marinara sauce (such as Rao’s)
½ cup roughly chopped fresh cilantro
1 tablespoon ground cumin
2 teaspoons ground coriander
½ teaspoon ground turmeric
Black pepper
3 cups water
1¼ teaspoons fine sea salt
For the Yogurt
¾ cup plain Greek yogurt
1 large garlic clove, finely grated
1 tablespoon chopped fresh dill
½ teaspoon fine sea salt
¼ medium lemon, juiced
¼ cup crumbled feta

Preparation
Prepare the rice:
- Step 1
In a medium pot over medium high heat, heat oil until it is loose and shimmering, about 1 minute. Lower the heat to medium and add onions, cover with a lid and cook, stirring occasionally as needed, until onions have softened and have light browning on the edges, about 7 minutes.
- Step 2
Uncover pot, add the garlic and cook until it has softened slightly, about 1 minute. Spoon the softened garlic and onions out of the pot and transfer to a bowl; set aside.

Add lentils to the same pot along with enough water to cover. Adjust the heat to medium-high, bring to a boil and cook until the lentils have softened slightly, about 14 minutes. Drain lentils in a colander and rinse briefly until the water runs clear.
- Step 4
Return the lentils to the pot along with the reserved onion-garlic mixture. Stir in the rice, marinara sauce, cilantro, cumin, coriander and turmeric. Cook for 1 minute until the rice starts to dry slightly.
- Step 5
Add the water to the pot along with the salt, adjust the heat to high and bring to a strong boil. Stir the rice mixture once more, cover the pot, and turn the heat to low. Cook undisturbed for 12 to 15 minutes, then remove from heat and let the pot rest, covered, for 5 minutes more, until the rice is tender.
Make the yogurt:

While the rice cooks, combine yogurt, garlic, dill, salt, lemon juice, feta, and pepper in a bowl until all the ingredients are integrated. Place the yogurt mix in the fridge to chill while the rice finishes.
- Step 7
When the lentil rice is ready, uncover the pot and fluff with a fork, and serve with feta yogurt.

I made this with fresh tomatoes - 4 Romano chopped and added to onion after they browned. Turned out great. I think blooming the spices improves flavor so I added the spices to browned onions and cooked for about 30 seconds before adding the tomatoes and garlic.
Made this per the recipe. it's pretty fast, pretty easy, mostly pantry ingredients and cheap too. It's also a nice comforting dish that feels like it'll keep a person going awhile. Nice combination of warm and cool, and earthy and light flavors. Will be adding to the rotation. pretty sure this will be a good one to riff on and add various veggies also.
This is basically majdara, although I've never seen it made with marinara before. You can greatly reduce the cooking time by soaking the lentils in very hot (now boiling) water for about 20 minutes, then cooking them with the rice. Personally, I make it in my instant pot.
Made in the instant pot with brown rice. Did eight minutes with ten min natural release but it needed two more. I kept the onions and garlic in and put spices in before lentils, rice, crushed tomatoes.
Wow, this was a winner! I used tomato paste instead of sauce (turns out marinara sauce is not a pantry staple for me- I never really thought about that). I put it in with the rice and spices so the paste could bloom as well. Threw it all hot over a bed of kale to sort of steam the kale, to add some leafy color and to use up some more kale coming out of my garden (I’m happily overrun). Loved!
My rice was still crunchy. I think it was more an issue of not enough water than not enough cooking time. Tasted good and seems like it will be better the next day. I don't know if the tomato added enough to bother with next time. I hate it when a recipe leaves you with something like most of a jar of sauce but would be a good way to use up a jar you already have. Would cook the onions longer and bloom the spices next time. I would also change the order. I'd cook the lentils first (maybe even a day ahead) then do the onions/spices /rice. That would eliminate a step and a bowl.
