This rich and creamy egg salad might become your new favorite. With just three pantry ingredients and no chopping, it comes together in a jiffy, and its flavor is surprisingly satisfying. The boost comes from miso paste, which doesn’t make the salad taste like miso, but rather seasons the mixture fully and amplifies the eggs’ buttery flavor and plush texture. This recipe can also serve as a starting point: Add chopped scallions, chives, ginger and celery, or furikake and sesame seeds. Eat it with crackers, wrapped in nori for hand rolls, or in a sandwich with avocado, cucumbers, lettuce or bacon.

    In a medium bowl, stir together the mayonnaise and miso. Use your hands to break up the eggs into about four ragged pieces each. Stir to combine, mashing up some of the egg whites as you go. If you like a looser egg salad, add more mayonnaise a tablespoon at a time.

I was surprised by this. I liked the creamy consistentcy. Added scallions and a tiny sprknle of salt.
