  • ¼ red bell pepper, minced

  • 1 cup minced Italian flat-leaf parsley

  • ¼ teaspoon cayenne pepper

  • 2 gherkin pickles, minced

  • 3 tablespoons capers, rinsed and minced

  • 1 cup olive oil

  • 1 tablespoon white-wine vinegar

  • ½ cup mashed potatoes

  • Salt and freshly ground black pepper to taste
