Ingredients
1 hard-boiled egg, chopped
1 cup homemade or Hellmann's mayonnaise
¼ cup chili sauce or ketchup
2 tablespoons finely chopped pimento-stuffed green olives
1 to 2 tablespoons finely chopped sweet pickle
1 tablespoon chopped onion
2 teaspoons finely chopped fresh parsley
½ to 1 teaspoon fresh lemon juice
Salt and freshly ground pepper to taste
Preparation
- Step 1
Combine the egg, mayonnaise, chili sauce, olives, 1 tablespoon pickle, the onion, parsley and ½ teaspoon lemon juice in a mixing bowl and blend well. Taste and season with salt and pepper. Add more chopped pickle and lemon juice as desired.

My husband who adores this dressing is making the nth batch right now, and you can definitely keep hard boiled eggs for weeks without any issues, we do it all the time. We do keep the dressing in the fridge for several weeks, and being an engineer he will tell you the quantity is enough to dress 5 lettuce wedges:)
I add sweet smoked paprika, but then again I add sweet smoked paprika to most everything...
I've been making this for years. I have an old NYT Cookbook from years ago that is held together with rubber bands. It's one of my favorites. I add a tsp of yellow mustard to give it a little bite. Very good.
Oh my God, this is so good! I used half harissa and half ketchup and left out the hard-boiled egg because I was halving the recipe. I just realized that I also forgot to add the onion. No matter; it's still insanely good.
I made this with ketchup because I didn’t have chili sauce. I added a teaspoon of chili powder to give it a little kick. It’s incredible.
