Ingredients

Yield:About five cups
  • 2 tablespoons olive oil

  • ½ cup finely chopped onion

  • 1 tablespoon finely minced garlic

  • 2 ½ cups canned imported tomatoes

  • 1 six-ounce can tomato paste

  • 1 ½ cups water

  • Salt to taste, if desired

  • Freshly ground pepper to taste

  • 1 teaspoon dried crumbled basil

  • ¼ cup finely chopped parsley

  • 1 bay leaf

  • ½ teaspoon dried thyme

Preparation

  1. Step 1

    Heat the oil in a large saucepan or small kettle, and add the onion and garlic. Cook, stirring, until the mixture is wilted.

  2. Step 2

    Add the tomatoes, tomato paste, water, salt and pepper to taste, and stir. Add the basil, parsley, bay leaf and thyme. Bring to the boil and let simmer 30 minutes.

easy, fast and convenient.

Added mushrooms, green peppers, celery. Doubled up on the herbs, garlic but that’s me. Lovely quick, easy, and adaptable base.
