Ingredients

Yield:⅔ cup sauce (enough for pasta for 4)
  • 1 whole bulb garlic, the cloves separated, peeled and smashed

  • ½ cup chicken broth, prepared by any standard recipe, or canned

  • 2 cups fresh basil leaves

  • 1 tablespoon olive oil

  • ½ teaspoon kosher salt (optional; skip if using canned broth)

Preparation

  1. Step 1

    Place garlic and broth in a 4-cup glass measure. Cover tightly with microwave plastic wrap. Cook at 100 percent power for 8 minutes (15 minutes in a small oven).

  2. Step 2

    Remove from the oven. Pierce plastic with tip of a small knife to release steam, then carefully remove plastic. Scrape mixture into a blender. Blend until smooth. With motor running, add the basil, then the oil and, if desired, salt. Blend well.
