½ cup heavy cream
2 large eggs, lightly beaten
Coarse salt and freshly ground pepper to taste
2 tablespoons walnut oil

Mix the potatoes and cheese with the cream and eggs and season to taste with salt and pepper.
- Step 4
Using the walnut oil, grease a shallow baking dish large enough to spread the potato mixture about 1 ½ to 2 inches deep. Chop the butter in small pieces and sprinkle on top.

I used this as the basis for potato cakes. Made it with extra sharp cheddar, added scallions. Cut the cream in half, next time will omit it. Might need roasted green chile. Cooked on a griddle. The cakes disappeared very quickly.
