Ingredients

Yield:10 to 12 servings
  • 4small onions or 2 large ones
  • 1clove garlic
  • pounds ground veal
  • Ketchup to taste
  • Pepper to taste
  • Garlic salt to taste
  • A cup or two of boiling water
  • 8ounces, approximately, of flavored bread crumbs

Preparation

  1. Step 1

    Chop the onions and saute them until translucent, adding garlic clove, minced or put through garlic press, toward the end.

  2. Step 2

    Put the meat in a big bowl. Add the onions, garlic, ketchup, pepper and garlic salt. Knead by hand. Add the water and the bread crumbs and mix well by hand.

  3. Step 3

    Shape into 2 loaves in baking tins. Cook 30 to 40 minutes in a preheated 350-degree oven. (''Stick a knife in,'' Mr. Perlman says. ''If it comes out cold, it's not ready; if it's warm, it is.'')

For a solo cook or a couple, this is just as good if you make only 1/4 the amount--e.g., 1 lb of ground meat. That amount fits perfectly in a disposable 4" x 8" loaf pan. Also you can make this with a beef substitute such as Beyond Beef, and it's just as delicious!
