  • 1 12-pound turkey (see note)

  • ½ pound butter

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon soy sauce

  • 3 cloves of garlic, chopped

  • salt and pepper

  • 1 cup water

Preparation

  1. Step 1

    Boil all the ingredients except the turkey. Brush the mixture on the turkey before, halfway through and at the end of smoking.

  2. Step 2

    Water-smoke for 4 to 5 hours. When the meat thermometer reads 160 degrees, take the turkey out. It can rest for as much as an hour before serving.
