  • 1 ½ cups cake flour

  • ½ cup plus 1 ½-2 teaspoons sugar

  • 2 teaspoons baking powder

  • 2 egg whites

  • 2 tablespoons skim milk

  • ½ cup applesauce

  • Grated rind of 1 lemon

  • 2 cups diced strawberries

  • 1 tablespoon dark-brown sugar

  • ½ teaspoon ground cinnamon

Preparation

  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Spray a 9-by-9-inch-square pan with nonstick cooking spray.

  3. Step 3

    Combine flour, ½ cup sugar and baking powder.

  4. Step 4

    In large bowl whisk egg whites and milk. Stir in applesauce and lemon rind. Add flour mixture and stir to moisten dry ingredients. Do not overmix.

  5. Step 5

    Spoon batter into pan and top with strawberries.

  6. Step 6

    Mix remaining 1 ½-2 teaspoons granulated sugar with brown sugar and cinnamon and sprinkle over strawberries. Bake about 30 minutes. Remove from oven and place on wire rack to cool. Serve warm or at room temperature.
