Ingredients
- 1cup buttermilk or water
- 2cups yellow cornmeal
- ½teaspoon salt
- ½teaspoon pepper
- 3tablespoons Cajun seasoning (or to taste)
- ½cup peanut oil for frying
- 4catfish fillets (about 8 ounces each)
Preparation
- Step 1
Place buttermilk in a shallow bowl. In another shallow bowl combine cornmeal, salt, pepper and Cajun seasoning.
- Step 2
Heat about ⅛ inch of oil in large skillet over medium heat until a pinch of cornmeal mixture sizzles quickly.
- Step 3
Dip catfish fillets into buttermilk to coat on both sides. Drain excess and dredge fillets in cornmeal mixture, coating both sides. Shake off excess.
- Step 4
Fry fillets in oil, 3 to 4 minutes on each side, until nicely browned and crisp.

This is a winner. Super easy, fast, and delicious. Great for weeknights. Kid friendly. Make it once and you’ll never need the recipe again, it’s that easy. Clean plate club for the whole fam!
My husband isn’t a fan of fish but loved this! I used Early’s white cornmeal. So easy and fast. Served with mashed butternut squash and sautéed chard, both from our garden. Delicious meal! Will have again.
We halved the cornmeal. After making this twice we found we end up with way too much cornmeal. This prep also works great for thinly sliced chicken breast if you have a picky eater that has yet to appreciate the joy of fish.
Skip the salt. The Cajun seasoning has enough in it. I sprinkled a dash and it was excessive.
