Summer Vegetables In Vodka Marinade

Ingredients
Yield:Ten servings
¼ cup fresh dill, rinsed and chopped
¼ cup fresh Neapolitan parsley, rinsed and chopped
1 teaspoon celery seeds
¼ cup vodka
2 tablespoons fresh lemon juice
5 carrots, peeled and julienned, 2 inches long
½ pound green beans, washed and trimmed
1 bunch scallions, white part only, washed and julienned, 2 inches long
2 medium-size red peppers, seeded and julienned, 2 inches long
2 medium-size yellow peppers, seeded and julienned, 2 inches long
1 quart cherry tomatoes, washed
Preparation
- Step 1
Combine all of the ingredients in a large bowl and mix well. Cover and refrigerate for a half hour.
- Step 2
Pour off any liquid and transfer the vegetables to a clean bowl.
- Step 3
Cover and refrigerate until ready to use.
