  • 2 bunches watercress

  • 1 ½ cups strawberries

  • 2 tablespoons balsamic vinegar

  • 3 tablespoons extra-virgin olive oil

  • Freshly ground black pepper

Preparation

  1. Step 1

    Remove and discard all heavy stems from the watercress. Rinse the watercress thoroughly, then dry it on paper towels or in a salad spinner. Put in a bowl.

  2. Step 2

    Rinse the strawberries and remove the hulls. If the berries are large, slice them. Otherwise, cut them into quarters. Add to the bowl with the watercress.

  3. Step 3

    Beat the vinegar and oil together, pour over the berries and watercress and toss. Season with pepper, toss again, then serve.

Made July 18, 2016. This was a great salad to go with a cheesy grilled burger on a very hot day. I added a handful of small sliced tomatoes. 2 things that make this a great salad: first,the strawberries have to be at their peak so don't use off season ones; second, mix in the salad dressing right before you intend to eat it.

Another nice dressing for a strawberry salad: 3 T olive oil 2T rice wine vinegar 1T sugar

We are growing red leaf lettuce and strawberries in our garden. I substituted the red leaf lettuce for the watercress. It is great! I never would have thought to combine both ingredients. I also add sliced almonds. Thanks for the idea!
