  • 3 tablespoons unsalted butter

  • ¼ cup fresh orange juice

  • 1 tablespoon grated orange peel

  • Coarse salt and freshly ground pepper to taste

  • 2 tablespoons fresh tarragon or parsley leaves, chopped

Preparation

  1. Step 1

    While the beets are cooking, prepare the butter. Melt the butter, add the orange juice, peel, salt and pepper and tarragon or parsley. Mix thoroughly.
