Ingredients

Yield:100 servings
  • 2 pounds bacon, sliced

  • 13 ½ quarts canned whole kernel corn

  • 1 ½ tablespoons salt

  • 1 ½ teaspoons pepper

  • ¾ cup canned pimentos, drained and finely chopped

  • 1 ½ quarts chopped green peppers

  • 4 ½ cups chopped onions

  • 1 ¼ cups melted shortening or salad oil

Preparation

  1. Step 1

    Cook bacon until crisp. Set aside.

  2. Step 2

    Drain corn; mix with salt, pepper and pimentos. Saute peppers and onions in shortening until tender. Add to corn mixture.

  3. Step 3

    Cook corn mixture over medium heat until hot, stirring constantly.

  4. Step 4

    Crumble bacon. Add to corn mixture. Mix well.
