Ingredients
Yield:100 servings
2 pounds bacon, sliced
13 ½ quarts canned whole kernel corn
1 ½ tablespoons salt
1 ½ teaspoons pepper
¾ cup canned pimentos, drained and finely chopped
1 ½ quarts chopped green peppers
4 ½ cups chopped onions
1 ¼ cups melted shortening or salad oil
Preparation
- Step 1
Cook bacon until crisp. Set aside.
- Step 2
Drain corn; mix with salt, pepper and pimentos. Saute peppers and onions in shortening until tender. Add to corn mixture.
- Step 3
Cook corn mixture over medium heat until hot, stirring constantly.
- Step 4
Crumble bacon. Add to corn mixture. Mix well.
