  • 2 tablespoons red onion, diced

  • 1 tablespoon jalapeno pepper, minced

  • 4 tablespoons lime juice

  • 1 tablespoon ground ancho chilies

  • Coarse salt to taste

    Combine all ingredients in a mixing bowl. Serve at room temperature.

Tip
  • For tomatoes: The tomatoes can be smoked in a home smoker or in a dome-covered barbecue grill. Prepare a charcoal or wood fire in the grill and let it burn to ashes. Lay chips of aromatic wood over the ashes and cover. Rub the tomatoes with olive oil and arrange them on a grill rack and place them on the barbecue. Open the top vent slightly, cover the grill and let the tomatoes smoke for 10 minutes.
