  • 2 pounds coarsely ground sirloin or ground round, with a fat content of 20 percent, or up to 25 percent for barbecuing

  1. Step 1

    Make 4 or 6 balls, place them on parchment or wax paper and cover with another piece of paper. With the bottom of a skillet or can, press the balls into patties, 1 to 1i inches thick. Grill over hot coals, sear in a hot cast-iron skillet over medium heat or broil in the oven 3 to 6 minutes per side, depending on the size of the patty.
