  • 4 tablespoons butter

  • 1 ¼ cup onion, chopped

  • 3 tablespoons garlic, minced

  • 1 teaspoon ground cinnamon

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 3 ½ pounds coarsely ground sirloin

  • 8 teaspoons plain yogurt

Preparation

  1. Step 1

    Melt the butter in a pan over medium-low heat and saute the onion and garlic until softened, about 5 minutes. Drain on a paper towel. Mix together the cinnamon, cumin and coriander.

  2. Step 2

    Combine the sirloin with the onion mixture and the spice mixture. Form into 20 balls, and flatten into ½-inch-thick patties.

  3. Step 3

    Put a teaspoon of yogurt in the center of 10 patties. Cover each of these with one of the plain patties and pinch around the edges to seal.

  4. Step 4

    In a cast-iron skillet, cook over medium heat 4 to 6 minutes per side. Serve immediately.
