Spiced Brown Sugar Syrup

Ingredients
- 1cup brown sugar
- 3cinnamon sticks, broken into smaller pieces
- 8whole cloves
Preparation
- Step 1
In a medium saucepan, combine all ingredients with 1 cup water and bring to a boil. Reduce heat to low and simmer for 10 minutes until sugar has completely dissolved, stirring occasionally.
- Step 2
Remove pan from heat and let the syrup cool. Strain syrup into a clean jar; discard solids. May be refrigerated for a week.

I omit the cloves so it’s basically a brown sugar cinnamon flavor syrup but I’ve had lots of success with these instructions carried over to different syrups! this is a great lil gift for friends with espresso machines

Does dark brown or light brown sugar work best?
I used a mix of 1/4 C dark brown sugar and 3/4 C turbinado sugar with tasty results. I think the sugar type is flexible and just depends on how much you like molasses flavor. I also added 1 tsp green cardamom pods to the spice mix. This will be a delicious way to have all of the holiday spice drinks I want while avoiding the over-the-top sweetness of many coffee shop drinks.
