  • 1ÂĽcup sugar
  • 3star anise
  • 1plump vanilla bean, split in half lengthwise
  • 22-inch long pieces lemon zest (peeled with a vegetable peeler), preferably Meyer lemons
  • 3firm Bosc pears
  • 1firm tart apple
  • 8dried Turkish apricots, cut in half
  • 4dried figs, quartered

Preparation

  1. Step 1

    Fill a medium saucepan with 5 cups water. Add the sugar, star anise, vanilla bean and lemon zest. Bring to a boil, and cook until all the sugar is dissolved. Then shut off the heat. Meanwhile, peel and core pears and apple. Slice thinly lengthwise and place in a large heatproof bowl. Add apricots and figs. Pour hot sugar syrup on top, making sure all the fruit is covered. Cover bowl with plastic wrap; poke a few holes in plastic. Chill overnight in refrigerator.

  2. Step 2

    The next morning, using a slotted spoon ladle fruit into a serving bowl and serve.

I substituted small red apples, crispy pears, and three grape varieties from a mixed pack. I added cloves to the syrup with the star anise. Before I served it I put butter (vegan), a whole knob of chopped ginger, salt, and brown syrup in a pan until it melted, then I tossed in a cup of walnuts and mixed them together in the pan until they were coated. I added the ginger nuts to the salad and they added the extra crunch, salt, and contrast the fruit needed to bring the salad together 👍

Tried it once last month and enjoyed it. More interesting that standard fruit salad. This time I will add a little ginger syrup with the star anise etc and see how that works.

Any garnishes to brighten up the brown look of this? Mint leaves?
